Tomato Cheese Soup

Ingredients:

3 whole fresh tomatoes

1 stalk celery, diced

3 cups chicken stock

2 scallions, minced

1 cup heavy cream

1 teaspoon fresh basil, chopped fine pepper to taste

8 ounces Cheddar / American cheese (mix)

3 strips bacon, cooked & crumbled

 

Directions:

1. Combine tomatoes, celery and scallions in food procesor or mixer and blend until coarsely chopped.

2. Pour into large saucepan, add chicken stock and bring to a boil over medium heat. Simmer for 20 minutes.

3. Add cream. Season with basil, pepper. Cook over low heat for 5 minutes.

4. Add cheese, stirring constantly until cheese melts. Add crumbled bacon.

Serve and eat!
