Spiced Shrimp from Morocco

Serves 4
Cooking time 5-6 minutes

 

Ingredients:

1½ lb raw medium shrimp (prawns)
salt
1/3 cup olive oil
1 tsp ground cumin
1 tsp ground ginger
1 T chopped fresh red chili
4 garlic cloves, finely chopped
1 tsp turmeric
1½ tsp paprika
¼ cup water
3 T finely-chopped cilantro
lemon wedges for serving
crusty bread for serving

 

Directions:

Peel and devein shrimp, leaving tails intact.  Place in a colander and rinse under cold running water.  Drain then shake well to remove excess water.  Sprinkle with about 1 tsp salt, toss through and set aside.

Heat a large frying pan over medium heat, and when hot add oil.  Stir in cumin, ginger, garlic, turmeric and paprika.  Cook until fragrant, add chili and cook, stirring for 30 seconds, then add prawns.  Increase heat slightly and cook prawns, tossing frequently until they are firm and turn pink, 4-5 minutes.  Stir in cilantro and ¼ cup (4 fl oz) water, bring to a simmer and remove from heat.  Serve immediately with lemon wedges and crusty bread.
